Power Up! Millet and Rice Power Bars

These are an excellent source of immediate, healthy energy for anyone looking for an extra something before or after their respective workouts. Made from puffed millet, rice and loaded with almonds and dried fruit, this energy bar is the ideal energy bar. High in protein, omega-3’s, and antioxidants, (thanks to the millet, which is a perfect protein grain, the almonds, and the dried blueberries and cherries) there’s no need to look further than the end of your nose.

Plus, the kids love these and there is nothing more satisfying than providing a yummy healthy treat for everyone to enjoy.

MILLET AND RICE POWER BARS

3 1/2 Tablespoons Unsalted Butter, diced
2 Tablespoons Orange Blossom Honey
2 Bags Small Air Puffed Marshmallows
5 Cups Puffed Brown Rice Cereal, like Nature’s Path
5 Cups Puffed Millet Cereal, like Arrowhead Mills
1 Cup Sliced Almonds
1 Cup Slivered Almonds
1 ¼ Cup Dried Sour Cherries
1 ¼ Cup Dried Blueberries

Spray a 13” x 9” x 2” rectangular pan with non-stick spray and set aside.

In a very large bowl, 16” wide x 9” deep, melt the butter with the honey over a pan with simmering water. Once the butter has melted, add the marshmallows and heat until they have completely dissolved and you have a sea of stickiness. Immediately pour in all the dry ingredients and begin mixing with your hands until everything looks evenly coated.

Turn the sticky mass into the pan and scrape as much of the mix off of your hands as possible. Rinse your hands and spray them with non-stick spray. Now press the mixture into the pan until the top is even and smooth. Allow to set for at least 15 minutes before slicing.

Using a very sharp knife, cut the power bars into symmetrical squares and wrap them in cellophane or place them in an airtight container for up to a week.

Makes 16 large bars.

    These bars are truly incredible! I made them with the intention of having a healthy GF snack or a quick breakfast on hand for myself, and thought possibly my nutrition-minded teen would give them a try… Boy, was I ever surprised! I sat near the kitchen and watched as my husband (who eats with us by choice) grabbed one of these bars each time he passed the container-four times in an hour!! My teen daughter took them to school to share with her friends at lunch, and even my three-year old has started asking for “Mama’s bar” with her yogurt at breakfast. Your cookbook is a goldmine! In fact, just this weekend, while traveling with a friend who suspects some type if gluten intolerance, I whipped up 4 batches of your Sunday Morning Pancakes and everyone down to the youngest kid was fighting for the last one! Thanks for sharing your talent and expertise!!
