HAPPY EARTH DAY!

In honor of Earth Day, I’ve decided to do a few things to display my devotion to helping improve the health of the planet and the people who people it.

My top honors go to the crew of the Plastiki Expedition as they sail from San Francisco to Sydney on a boat constructed out of 12, 500 plastic bottles to help raise awareness about the over consumption of plastic and the detriment it is causing to the environment and ultimately, ourselves.

Secondly, since I also believe that the harmful by-products of plastics could be one of the contributing culprits to auto-immune disorders such as celiac disease, I felt it fitting that I post a recipe that came to life during my last stay in San Francisco, the ever comforting chicken pot pie.

I made my chicken pot pie recipe for a Super Bowl party that my friends were hosting while I hunkered down and finished the final edits to the Blackbird Bakery Gluten Free cookbook. I’m not sure if it was the fact that I finished the manuscript, the deliciousness of the savory pies, or the last minute win by the Saints that made the day so perfect, but like all good times, I know it was the combination of circumstances that made it so memorable.

Lastly, I will indulge in one of my favorite yoga classes at 707 Yoga to keep myself limber and strong enough to keep doing what makes me the happiest: espousing healthy living for a healthy planet.
