Happy Father’s Day! (Belated)

Poor Tim! He’s been sick for over a week so our Father’s Day celebration was pretty subdued. Nonetheless, I went ahead and made him one of his favorite Sunday Breakfasts: Buttermilk Waffles. Served with organic maple syrup, butter and fresh fruit, you won’t even realize that what you are eating is gluten free. (Hand clap)

But since Tim was sick, I didn’t have time to make my post until this morning, so sorry that all the accoutrements are absent.

BUTTERMILK WAFFLES

1 Stick Unsalted Butter, melted
2 Cups Bob’s Red Mill All Purpose Flour
¼ Cup Packed Light Brown Sugar
3 Tablespoons Granulated Sugar
1 Teaspoon Baking Soda
1 ½ Teaspoons Baking Powder
½ Teaspoon Extra Fancy Vietnamese Cassia Cinnamon, generous scoop∗
¼ Teaspoon of Freshly Grated Nutmeg
Pinch of Allspice
½ Teaspoon Kosher Salt
3 Large Eggs, separated
2 Cups Buttermilk
2 Teaspoons Pure Vanilla Extract

Sift all dry ingredients into a large bowl and set aside. Place egg whites in a separate bowl and set aside. Wisk together the egg yolks, buttermilk, melted butter and vanilla in another bowl and slowly add to the dry ingredients, rhythmically whisking the whole time. Beat the egg whites until stiff but not dry. Fold the egg whites into the combined mixture until smooth. Ladle 1/3 cup onto the bottom half of a greased waffle iron and cook until golden brown.

∗The Extra Fancy Vietnamese Cassia Cinnamon is the most flavorful cinnamon that I have ever used and I highly recommend purchasing some if you’ve never experienced it’s perfect balance of strength and sweetness; it’s smell reminds me of Red Hots, those tiny red candies that were all over during the 80’s, turning tongues and teeth alike a bright day-glow red.
